Chicken Pockets

Where to even begin. These yummy little pockets are filled with goodness and love! As always an easy make and a crowd pleaser.

 
Shopping list
 
Chicken
Fresh spinach
Cream cheese
Butter
Bread Crumbs
Cream of Chicken soup
Crescent Rolls- ( Spend the extra money and get the big and flakey rolls. The cheaper rolls are not as pliable and turns into a nightmare).
Poultry seasoning
Salt
Pepper
 
I like to get my chicken boiling. I like to use chicken tenders because they boil faster. I used about 1/2 pound of chicken per 1 can of crescent rolls.

 
I grabbed a handful of spinach and washed it. Then I just chopped it up into tiny little pieces.

 
Make sure the cream cheese is softened. Then add poultry seasoning along with salt and pepper. Add the chopped spinach into the cream cheese. Then you just mix it all up.

 
By this point your chicken should be cooked to perfection. Just shred that chicken up with a couple of forks. Should pull apart easily. Just dump that chicken in with the cream cheese and give it a stir.

 
Melt some butter in a bowl. I used Italian bread crumbs, just dump it into a bowl. You'll make a little assembly line.  

 
Unroll your crescent rolls. Then place a spoonful of the chicken cream cheese mixture into the crescent roll. Then form into a pocket and seal all the edges. I guess that really isn't a pocket. Oh well, too late to rename this recipe. After you have all your chicken pockets formed roll in butter and roll in the bread crumbs.

 
Place them on a slipat. Bake them at 350 degrees for about 15 minutes. Bake until golden and delicious. While these are baking away. Warm up the cream of chicken soup diluted with a little milk. Once these chicken pockets come out. Drizzle soup over the top of pockets are serve.

Real Birthday Cake

It that time of year again, another birthday. What to do, what to do. How about keeping it real this year? Yeah, that sounds like a plan, ready, set, bake!

 
After working 10 hours I'm not about to come home and bake from scratch. So I picked up a box of cherry chip and a box of chocolate cake mix.

 
After getting my chocolate all mixed together, I remembered that I was being lazy.

 
I have a stand mixer. So I mixed the cherry chip together, so easy. I don't know how I lived for 28 years without one. No wonder my arms are so ripped, its from all the hand mixing.

 
I baked the cakes in 8 inch rounds, since they are thicker, you'll have to let them cook a little longer. I think these were about 40-45 minutes. Just watch them.

 
After they cooled, I used a cake leveler to cut off the tops. Not even kidding, this is the best 3 dollars I've ever spent. 

 
I set the cake cutter to split my cake in half.


I used a homemade chocolate buttercream. I just put down a cherry chip cake and frosted it.
 

 
I find it useful to have an additional cake board for moving your cake pieces. They are not that think and I feel like you could break them pretty easy. I just layer this cake up with the cherry chip and chocolate with the chocolate buttercream in between layers. Then I frosted the entire cake in chocolate buttercream. I used some vanilla buttercream to pipe on my birthday wishes. Then of course used sprinkles and edible glitter, because what cake it complete without that?

 
There you have it. A down to earth delicious birthday cake.
This just proves you can be a lazy baker!!

So these little beauties are easy to make in a jiff. They are always a crowd pleaser.

 
Pickle Roll Up Shopping List
 
Cream Cheese
Ranch Dressing Mix
Mini Dill Pickles
Ham
Tortillas
 

 
First you will want to have your cream cheese at room temperature. Add one packet of ranch dressing mix into the cream cheese. Then get your other ingredients ready to roll.
 

I have found that the easiest way to get the dill pickles into bite size pieces is a grater. Use the larger side and just grate away. You will find that these are perfect size for tortilla roll ups.


 
Voila! Tiny pickle pieces!

 
Get some scrumptious ham and chop it up.

 
Now is the simple part. Get your self a tortilla. Spread half of the ranch cream cheese onto a tortilla. Then layer pickle pieces and ham on top. Then just roll it up. I like to cut them into 1 inch pieces. I always eat the end because they aren't that pretty, so no one needs to see that. You should get about 6-7 rolls per tortilla. Bring them to your next party and get ready to receive compliments!

What to get someone how has everything? A funny cross stitch! How does one go about this task? First find something fun or clever on the internet. Then just cross stitch away.
 
 
I found my funny saying off a t-shirt on the internet. Then I found a cross stitch pattern off the internet as well. Then I worked away until the master piece above was completed. You can find some pretty funny pictures too. Borders are also a nice touch to bring it all together. Cross stitching is a wonder way to pass the time. They also can make some pretty hilarious gifts too!
